How to Use

Step 1: Combine & Smooth In a medium-sized pot, combine flour mix, 6 cups of water (for a richer flavor, use 5½ cups water + ½ cup coconut milk), and your choice of coloring (pandan extract works too!). Stir thoroughly with a whisk until the batter is completely smooth and free of any lumps.

Step 2: Cook to Glossy Perfection Place the pot over medium heat. Stir constantly to prevent sticking or burning. As the mixture heats, it will thicken significantly. Continue cooking and stirring until the batter becomes translucent, smooth, and glossy. It should have a thick, elastic consistency that can still be pressed.

Step 3: Shape the Lod Chong Prepare a large bowl filled with ice-cold water. While the batter is still hot, pour it into a Lod Chong press, a perforated pot, or a large slotted spoon. Use a large spoon or spatula to press the batter through the holes directly into the cold water.

Step 4: Set & Store Transfer the formed Lod Chong into a second bowl of fresh room-temperature water. Keep the strands submerged in water until you are ready to serve to maintain their silky texture.
